Barbara, Dorcas & Frances.


An idea that became a reality when family bonded together to gather recipes from the past. I would like to thank everyone for their submissions. Many a memory we have from these tasty treats and hopefully by putting them all together ~
many more can be made.

Mocha Cakes

Mocha Cakes


½ c shortening

½ c sugar

2 c flour

½ c milk

2 eggs

2 c flour

2 tsp baking powder

dash of salt

Cream together wet ingredients.

Mix all dry ingredients and fold into wet mixture.

Bake in shallow pan.

When cold – cut into desired shapes.

Split cakes through the center and put together with softened jelly.

Brush mocha frosting over sides and roll in coconut.

Brush top with frosting and pipe a border round top of cake.

Put a very small spoonful of jelly in the center.


Mocha Frosting


3 tbsp butter

3 tbsp strong hot coffee

3 tbsp cocoa

1 c sifted icing sugar

Add butter to coffee – when melted stir in cocoa blending smooth.

Add icing sugar a little at a time mixing smooth.

The frosting should be soft enough to spread easily.



Mexican Fuit Cake

Mexican Fruit Cake


2 cups flour

2 cups sugar

2 eggs

2 tsp soda

1 cup chopped nuts

1 19 oz crushed or chunks pineapple and juice

Mix together and bake in a 9 x 13 pan. Bake at 350 degrees for 40 to 45 minutes.

Icing

4 oz cream cheese

¼ cup margarine

1 cup icing sugar (1/4 cup more if needed)

½ tsp vanilla

Mix together, spread on mexican fruit cake.

Dark Fruitcake

Dark Fruit Cake


1 Cup Butter

1 ¼ cup brown sugar

5 eggs

½ cup molasses or preserves

½ tsp soda

2 cups flour

Mixed fruit

¼ tsp nutmeg

1 tsp cloves

½ tsp cinnamon

1/s tsp allspice

Steam 3 hours, bake 1 hour.

Sticky raisins are best, if you can find them

Fruited Pound Cake


Fruited Pound Cake


1 cup butter

1 cup powdered fruit sugar

(yes you can get it, you just need to look carefully!!!!)

4 eggs

1 tsp lemon juice

Cream these ingredients together

1 ½ cup flour

½ tsp salt

½ baking powder

Mix these together

½ cup raisins

½ cup candied cherries

½ cup peel or mixed fruit

3 tbsp flour

Mix the fruit with the 3 tbsp flour,

Cook at 350 degrees for 35-45 minutes, or until done




Gum Drop Cake

Gum Drop Cake


½ cup of butter

1 cup of sugar

2 eggs

½ c. milk

2 tsp. of baking powder

¾ lbs. gum drops (cut up)

Salt, flavouring

Nuts may be added too.

Bake about 1 hour or longer.

No temperature? – Lori would say 350 degrees!

Boiled Icing

Boiled Icing


2 egg whites

¾ c sugar (brown or white)

1/3 c corn syrup

2 tbsp water

¼ tsp cream of tartar

¼ tsp salt

1 tsp vanilla

Put all except vanilla in a double boiler.

Mix with hand held mixer till stiff peaks form.

Add vanilla and stir just until combined.

Blueberry Cheesecake

Blueberry Cheesecake


2 ½ c graham wafer crumbs

6 tbsp butter/margarine

2 blocks cream cheese

1 c sugar

¼ tsp salt

2 tsp vanilla

2 tsp lemon juice

1 tub Cool Whip

3 c blueberries

Melt margarine in a 13x9 pan over low heat –

stir in crumbs until blended.

Press firmly into pan and refrigerate.

Blend cream cheese, sugar & salt until smooth and fluffy.

Stir in lemon juice and vanilla.

Blend in Cool Whip and fold in blueberries.

Pour over crumbs. Chill at least 3 hours before serving.

**Can also use crushed pineapple and mandarin oranges

(both drained) or the fruit of your choice.
