Maple Apple Oatmeal Muffins
1 ¼ c rolled oats
1 ½ c milk
2 c flour
1 tbsp baking powder
½ tsp salt
1/3 c sugar
½ c maple syrup
1 egg
¼ c melted butter
1 tsp vanilla
2 c finely diced apples
Preheat oven to 400.
Combine oats & milk – let stand 5 minutes.
In separate bowl combine flour, baking powder & salt. Whisk sugar, maple syrup, egg, butter & vanilla into milk mixture.
Pour over dry ingredients and sprinkle with apples. Stir just until moistened. Spoon into muffin pan.
Bake 25 min or until tops are firm.
Let cool 10 min and brush with maple syrup.
