Oatmeal Crackers
3 c. oatmeal
3 c. white flour
½ c sugar
2 tsp. salt
1 tsp. soda
1 ½ cups lard
¾ c of cold water
Roll on board with oatmeal.
Cut in squares.
Bake about 15 min. 325-350 degrees.
Grammy Stiles Caramel Rice Pudding
1/3 cup white real rice
¼ tsp salt
1 ¼ cups boiling water
2 tbsp butter
¾ cup brown sugar
1 ½ cups evaporated milk – canned
cook rice with salt in boiling water.
[use a double boiler] for 30 minutes
Melt butter and brown sugar in skillet over low heat.
Add milk, butter and brown sugar mixture to the rice in the double boiler.
Cook for 30 minutes, or longer if needed – until rice is tender.
Serves about 5-6 with cream
Usually takes a couple of hours to make....
Or more if you are standing over a wood stove !!!
Cream together 2 eggs & 1 c sugar
1½ c flour
1 tsp soda
1 tsp baking powder
½ tsp salt
½ tsp ginger
2 tsp nutmeg
1 tsp vanilla
1 tsp almond flavoring
1 c sour milk/cream
Add vanilla, almond flav. and sour milk/cream to eggs & sugar mixture.
Add rest of ingredients and stir well.
Add approx 1 cup more flour until dough is firm but not dry.
Roll out and cut – Deep fry
2 c blueberries
¾ c sugar
½ c milk
1 c boiling water
3 tbsp. margarine
1 tsp. baking powder
1 tbsp. cornstarch
½ tsp. cinnamon
¼ tsp. salt
1/8 tsp. salt
1 c. flour
1 c. sugar
Put blueberries in buttered 8X8 pan.
Sprinkle with lemon juice and cinnamon.
Cream margarine and ¾ c. sugar.
Sift flour, 1/ tsp. salt and baking powder.
Add sifted dry ingredients alternating with milk to creamed mixture.
Spread batter over berries. Mix ¾ c. sugar, 1/8 tsp. salt and cornstarch.
Sprinkle this over batter. Pour 1 c. boiling water over top.
Bake in 375 degree oven for 30 minutes.
